The sparkling wine Rebolium comesfrom the indigenous variety Ribolla. It is produced with the classic method and aged on the lees for at least 18 months. Rebolium shows a lively froth and a fine perlage (tiny bubbles), which persist in the glass for a long time.
To the smell , Rebolium has a clean pure taste with a slight note of lees, while the finish is nice and long. The sparkling wine, Rebolium Sinefinis, is delicate, refined, but with character. It is suitable as an aperitif, and it can also be paired with fish, white meats, fresh cheese, or can be simply enjoyed with friends.
The wonderful and generous hills, that in Slovenia are called Brda and in Italy, Collio, have seen a succession of feudal lords in the past millennium: The Patriarchate of Aquileia, the Counts of Gorizia, as well as various rulers, the Hapsburg's, Napoleon Bonaparte, and the Kingdom of Italy. Even though these hills passed from several hands they somewhat managed to remain united. However, with the Treaty of Paris in 1947, a state border split the territory into two parts: one part was assigned to former Yugoslavia, and the other part to the Italian Republic. This border caused irreparable damages to the inhabitants, dividing families and vineyards. This is how the story of the two D.O.C. territories, Brda and Collio, begins. Recently, these territories have been classified as “C2 zones”, thanks to the unity regained under the European flag and a legislative alliance imposed by the European Commission. This classification gives wine makers the opportunity to produce wines from grapes harvested from both Collio and Brda vineyards.
Two young wine makers, Robert Princic, from Giasbana, San Floriano del Collio (Italy), and MatjažCetrtic, from Kojsko (Slovenia), have combined their agricultural and commercial skills, as well as hard work, in a joint project called Sinefinis. Collio and Brda have once again become one, thanks to the help of Robert’s and Matjaž’s companies - Gradis’ciutta, www.gradisciutta.com, and Ferdinand, www.ferdinand.si - and the indigenous grape par excellence, the Ribolla Gialla/Rumena Rebula. A few years ago, these two young vintners refined their knowledge and honed their marketing strategies thanks to a Postgraduate MBA, Masters in Wine Business, from the MIB School of Management in Trieste. Their shared mindset has led to the creation of an excellent and unique product: Rebolium Sinefinis, bubbles beyond borders.
Ribolla Gialla (Rumena Rebula) has always been a very fine variety in Collio. The earliest records date back to the Middle Ages, with the name Rebolium. Over the centuries, Ribolla is the only local variety that has been constantly celebrated and rewarded, especially under the “Princely County of Gorizia and Gradisca”, from the 18th to the 20th century. There are historical writings testifying that even at that time, the best vineyards that produced this variety, were those in both San Floriano del Collio (Italy) and Kojsko (Slovenia). This historical aspect confirms that the microclimate of the two places is indeed well suited for the production of Ribolla/ Rebula.
